Have you seen the lobster cake trend making the rounds on TikTok lately? As soon as I saw it, I knew: this was the dessert for me. It’s summery, whimsical, and just the right mix of clever and charming. Think: backyard clambake meets Nancy Meyers kitchen vibes—and I’m so here for it.
Let’s be honest: I’m not exactly known for my baking prowess. I have my moments (usually around the holidays), but most of the time, I’m looking for ways to get creative in the kitchen without turning it into a science experiment. That’s why this cake is perfect—it looks impressive, but it’s basically just playing with your food in the best way.

Here’s how I made it:
Step 1: Pick your base.
I grabbed a mini sheet cake from Trader Joe’s in the lemon flavor (which, by the way, is so good). You could absolutely stack two of them if you want a little more height and drama.
Step 2: Slice your strawberries.
You’ll need one carton of fresh strawberries. I picked out the largest berries for the lobster’s head and claws. A medium strawberry worked perfectly for the body and tail, and then I filleted a few slices into thin strips to shape the legs and antennae.
Step 3: Assemble your lobster.
This part is basically edible art. I used the cake as my canvas and placed the strawberry slices to form the outline of a lobster. Don’t worry about being too precise—just have fun with it. The charm is in the creativity.
Step 4: Serve and soak in the compliments.
This is the kind of dessert that makes people do a double take. It’s playful, it’s patriotic, and it’s just right for summer alfresco dinners or Fourth of July parties.
